Cheddar Phyllo Roll

  • 500 g broccoli florets
  • 4 tsp safflower oil
  • 1 shallot,  finely chopped (about 2 tbsp)
  • 2 large courgettes, grated
  • 6 tbsp dry vermouth
  • 2 tbsp plain flour
  • 12.5 cl semi-skimmed milk
  • 30 g Cheddar cheese, grated
  • 1/8 tsp salt
  • 4 sheets phyllo dough (about 45 g)

Pour enough water into a saucepan to fill it 2 cm deep. Set a vegetable steamer in the pan and bring the water to the boil. Put the broccoli into the steamer, cover the pan tightly, and steam the broccoli until it is tender - about 7 minutes. When the broccoli has cooled, chop it coarsely and set it aside.

Preheat the oven to 220'C. Heat 2 teaspoons of the oil in a large non-stick frying pan over medium-high heat. Add the shallot and saute it until it is translucent - about 2 minutes. Add the courgette and cook it, stirring continuously, until it is tender - about 2 minutes more.  Reduce the heat to medium, add the broccoli and vermouth to the vegetables, and cook them until the vermouth has evaporated - approximately 5 minutes.

Stir the flour into the vegetables. Add the milk and continue cooking the mixture, stirring continuously, until the liquid comes to the boil. Add the cheese and salt and set the pan aside to cool.

Place the phyllo sheets, stacked on top of each other, on a work surface. Spoon the cooled vegetable mixture lengthwise down the centre of the top sheet. Fold a long side of the stack of sheets over the filling and brush the edge lightly with some of the oil. Fold the other long side over to cover the filling.

Brush both ends with about 1 teaspoon of the remaining oil. Fold up the ends to enclose the filling. Turn the phyllo roll seam side down and set it on a baking sheet. Brush the top surface of the roll with the remaining oil. Bake the roll until the phyllo is crisp - approximately 20 minutes. [Dartmoor] [Edinburgh] [Eire] [England] [Essex]
